A Mosaic of Flavor: Yemeni Roz Ma’ Dajaj and Tabikh Bamia Ma’ Dajaj

This monthly series is a collaboration with the Vermont Refugee Resettlement Program. In December, we will be preparing two traditional dishes from Yemen. We will learn to make Roz Ma' Dajaj, a popular rice and chicken dish that is seasoned with tomatoes, onions, cilantro, hot peppers and a blend of spices. There are many versions of this main dish and it's so popular it is served almost daily in Yemen. We will also learn to make Tabikh Bamia Ma' Dajaj, an okra and chicken stew sauce that is traditionally served with bread. Seham Alsakkaf is from Yemen and came to Vermont 9 months ago. She loves to cook and learned her love for Yemeni cooking from watching her mother cook. Seham lives in Winooski with her husband and 15-month-old son.
