Garlic Basil Ratatouille

Serve this delicious vegetable stew over cooked couscous or nutty brown rice sprinkled with shredded or flaked Manchego cheese, and a side of garlic green beans. Use fire-roasted instead of plain diced tomatoes for a smoky, outdoor flavor. Substitute raw sunflower seeds for the pine nuts for an even lower cost-per-serving, and use whatever summer squash is most readily available.

Paleo Sweet Potato Casserole

This not-quite traditional side dish is a natural accompaniment for  roast turkey, pork or chicken, or savory meat alternatives like braised tempeh. It also holds up well on a buffet table and is easy to bring along to a holiday potluck.

Chicken Adobo

This is a classic dish served in the Philippines. It was shared at one of our City Market cooking classes, taught by Maria Garrido. Given the large amount of vinegar, lean meat (chicken breasts or pork chops) is not recommended, as it tends to dry out. After the chicken is cooked, don’t discard the leftover marinade, it is delicious over rice or noodles!

Kimchi Fried Rice

This dish makes for a flavorful (and fast) lunch on its own, or serve with an Asian-style slaw or steamed broccoli for a well-rounded dinner. Substitute cubed marinated baked tofu for the eggs, if you like! The flavors and spice level can vary greatly in kimchi, so you can customize this to meet your family’s preferences.

Southwestern Chicken Quesadillas

In a large bowl, combine chicken, grapes, celery and slivered almonds. In another smaller bowl, combine yogurt, mayonnaise, lemon juice, curry powder, salt and pepper, whisk to combine. Pour sauce over chicken mixture and toss all the ingredients together. Enjoy as is or place a heaping spoonful on one large lettuce leaf and roll to make into a lettuce wrap!
