“One Pot” Turkey & White Bean Chili

Ingredients

2 tablespoons olive oil
1 onion (diced)
1 tablespoon garlic (peeled and minced)
1 bell pepper, green (diced)
1⁄2 cup carrot (diced)
1 cup squash, butternut (peeled and diced)
1 pepper, jalapeño (minced)
1 pound turkey, ground
1⁄2 cup bacon, turkey (diced)
3 tablespoons chili powder
3 tablespoons cumin
1⁄2 teaspoon curry powder
28 ounces tomato, crushed (canned)
3 tablespoons tomato paste
1⁄2 cup water
28 ounces beans, white (canned)
  salt (to taste)
  black pepper (to taste)
1⁄2 cup sour cream (for garnish)
1⁄2 cup scallion (chopped (for garnish))
  lime juice

Instructions

Set your multi-cooker setting to Sauté. Heat oil and sauté garlic and onions until translucent, about 5 minutes. Add turkey and stir with wooden spoon to break up ground turkey. Then add bacon, bell peppers, carrots, and butternut squash and continue to cook for 5 minutes. Season with salt and pepper. Add in cumin, chili powder and curry and stir to incorporate. Add tomato paste, crushed tomatoes, ½ cup of water and beans. Switch cooker to “Chili/Bean” setting and set the timer for 25 minutes. Once cooking is complete, release the pressure valve and slowly remove lid to gently release the steam. Taste and adjust seasoning as needed. Garnish with sour cream, chopped scallions and a squeeze of lime.
