Wasabi and Citrus Salmon

Fruit and fish go hand in hand. Serve this recipe with a side of new potatoes or a fresh fruit salad.

Ingredients

4 salmon (fillets)
4 onion, sweet (sliced into rings)
3 cloves garlic (minced)
6 basil, fresh (leaves, chopped)
1 orange (zested and juiced)
1 lime (zested and juiced)
1 dill, fresh (minced)
1⁄4 cup crème fraîche
3 tablespoons olive oil
2 teaspoons Wasabi paste
1⁄4 cup water
  salt (to taste)
  black pepper (to taste)

Instructions

Prep veggies and herbs for use. Mix crème fraiche with 2 Tbsp orange juice, dill, salt and pepper.

Heat pan over medium heat and add oil. Cook salmon fillets in pan for 3 minutes on each side, seasoning with salt and pepper. Add onion and garlic to pan and cook for 1 minute. Add lime juice, remaining orange juice, and water and bring to a boil. Add crème fraiche mixture. Add wasabi and stir well. Then add basil, salt and pepper. Cook for a few minutes more.

Serve fillets with their sauce and garnish with basil leaves.
