These Asian-inspired and filling noodles combine common ingredients to create a very uncommon, affordable main dish.
Cook noodles until just tender. Heat sesame oil in a medium skillet. Sauté onion, garlic, salt and pepper until onion is translucent. Add red pepper and simmer until tender.
In a small bowl combine peanut butter, rice syrup, and hot water. Blend until smooth and creamy. Add peanut mixture and snow peas to onion mixture in skillet and heat until sauce is thick and bubbly. Combine peanut sauce with noodles and mix until well coated. Stir in chopped peanuts and serve hot or cold.
