Classic Vinaigrette with Local Oil & Vinegar

A great Localvore dressing to go with fresh salad.

Ingredients

1 teaspoon Mustard, Dijon
2 tablespoons apple cider vinegar
1 pinch salt
1 shallot
6 tablespoons sunflower oil
  black pepper

Instructions

In a mixing bowl, allow the vinegar, salt and shallot to stand 15 minutes. Stir in mustard. Whisking constantly, slowly drizzle in the oil in a slow trickle. Season with pepper to taste.

Notes

Technique Variation: Put everything in a tightly lidded jar and shake vigorously.
