Austrians make a little dumpling called “nockerl” that is their version of Italian gnocchi. Easy to make, it can form the base of a savory dish of dumplings, sautéed local baby greens, and grated Vermont cheese, gently heated in the oven until the cheese is warm and bubbling. We will make a classic Austrian green salad to eat on the side.
