This is no ordinary Vegetarian Quiche.  A big mix of fresh flavors and a bit of a spicy kick make this a delicious breakfast treat.

Ingredients

1 tablespoon vegetable oil
3 onion (chopped)
1 1⁄2 bell pepper, green (large, chopped)
2 tablespoons garlic (minced)
10 egg (beaten)
3 zucchini (peeled and grated)
3 squash, summer (peeled and grated)
3 carrot (grated)
3 green onion (sliced)
3 cups buttermilk baking mix
1 1⁄2 cups cheese, sharp cheddar (shredded)
3⁄4 cup vegetable oil
1 tablespoon salt
2 1⁄4 teaspoons Italian seasoning
1 1⁄2 teaspoons paprika
1 1⁄2 teaspoons red pepper flakes
  black pepper (to taste)
1 1⁄2 cups cheese, cheddar (shredded)

Instructions

  1. Preheat oven to 350 degrees.  Grease pie dish.
  2. Heat 1 teaspoon vegetable oil in a skillet over medium heat.  Saute onion, bell pepper, and garlic until tender, about 5 minutes.  Transfer mixture to a bowl.
  3. Mix eggs, zucchini, yellow squash, carrots, green onion, baking mix, 1/2 cup Cheddar Cheese, 1/4 cup vegetable oil, salt, italian seasoning, paprika, red pepper flakes, and black pepper into onion mixture.  Spread vegetable mixture into prepared baking dish and sprinkle with remaining cheddar cheese.
  4. Bake in preheated oven until lightly browned about, about 35 minutes.
