This is no ordinary Vegetarian Quiche. A big mix of fresh flavors and a bit of a spicy kick make this a delicious breakfast treat.
1 tablespoonvegetable oil
1 1/2bell pepper, green (large, chopped)
2 tablespoonsgarlic (minced)
3zucchini (peeled and grated)
3squash, summer (peeled and grated)
3green onion (sliced)
3 cupsbuttermilk baking mix
1 1/2 cupcheese, sharp cheddar (shredded)
3/4 cupvegetable oil
2 1/4 teaspoonsItalian seasoning
1 1/2 teaspoonpaprika
1 1/2 teaspoonred pepper flakes
1 1/2 cupcheese, cheddar (shredded)
- Preheat oven to 350 degrees. Grease pie dish.
- Heat 1 teaspoon vegetable oil in a skillet over medium heat. Saute onion, bell pepper, and garlic until tender, about 5 minutes. Transfer mixture to a bowl.
- Mix eggs, zucchini, yellow squash, carrots, green onion, baking mix, 1/2 cup Cheddar Cheese, 1/4 cup vegetable oil, salt, italian seasoning, paprika, red pepper flakes, and black pepper into onion mixture. Spread vegetable mixture into prepared baking dish and sprinkle with remaining cheddar cheese.
- Bake in preheated oven until lightly browned about, about 35 minutes.
