Description
Enjoy a great substitute for hummus!
Ingredients
| 2 | hot peppers | |
| 2 | Clove | garlic |
| 2 | Tablespoon (Metric) | sunflower oil (try the local sunflower oil) |
| 3 | Tablespoon (Metric) | cider vinegar (try the Quebec cider vinegar) |
| 1 | Tablespoon (Metric) | honey (try Bee Haven honey) |
| salt and pepper (to taste) | ||
| 1 | Cup | beans, yellow-eye (try the local ones) |
Instructions
Soak beans overnight. Bring beans to a boil in plenty of water, then reduce to a simmer. Cook until tender (about 45 min).
Meanwhile, slice peppers in half and remove seeds. Peel garlic. Broil peppers and garlic until brown and slightly tender.
Add cooked beans, peppers, garlic, and remaining ingredients to a food processor. Process the dip until it's creamy in consistency. Add salt and pepper to taste, if needed. Also play with quantity of honey and vinegar to your preferred balance of sweet tanginess.
