Quinoa's nutty taste and fluffy texture are a great match for winter squash.
Preheat oven to 350. Place squash halves cut side up in a baking dish and fill dish with about 1/4 cup water. Season each half with 1 tablespoon butter, salt and pepper. Cover dish with foil and bake about 30 minutes, or until tender.
Place quinoa in a pot with 2 cups water and bring to a boil. Reduce heat to low, cover, and simmer 15 minutes.
Melt 1 tablespoon of butter in a small skillet over medium heat and add onions and garlic. Cook until golden. Gently mix onions and garlic into the pot with the quinoa, and add dried fruit and nuts. Cut the squash halves in half and fill each quarter with the quinoa mixture. Serve warm.
