Spinach and Artichoke Quiche

Ingredients

1 pastry crust (pre-made, 9-inches)
1⁄2 cup artichoke hearts (finely chopped)
6 ounces spinach (cooked and finely chopped)
1 tablespoon butter
1⁄2 cup shallot (minced)
2 teaspoons lemon zest (grated)
4 egg
1 cup milk
1⁄2 cup heavy whipping cream
8 tablespoons cheese, goat
1 1⁄2 teaspoons salt
1⁄4 teaspoon black pepper
2 tablespoons chives (minced)

Instructions

Preheat oven to 375 degrees F. 

Melt butter in a small saucepan over medium heat. Add shallots, and cook until they are translucent, about 3-4 minutes, add spinach and gently toss until spinach is wilted, then take the pan off heat to cool.

In a large bowl, beat the eggs and add goat cheese. Whisk until smooth and then stir in all remaining ingredients: artichoke hearts, spinach, lemon zest, milk, heavy whipping cream, salt, pepper and chives. Pour the mixture into the pie crust and bake for 10 minutes. Lower the heat to 350 degrees F and bake for an additional 30 minutes.
