Spiced Pear Scones

When using Asian pears or other watery varieties of the fruit, you can roll them in cornstarch before putting them in the dough. This will prevent them from releasing too much water and making the dough too wet.

Ingredients

2 cups flour, all-purpose
1⁄4 cup sugar (plus 2 tablespoons for sprinkling)
2 teaspoons baking powder
1⁄2 teaspoon baking soda
1⁄2 teaspoon salt
1⁄2 teaspoon cinnamon
1⁄4 teaspoon nutmeg
1⁄4 teaspoon ginger
1⁄4 cup butter (cold)
3 pears (small, chopped)
1⁄2 cup buttermilk (plus extra for coating )

Instructions

Preheat oven to 425F.

Combine all dry ingredients in a large bowl. Chop the cold butter into small pieces and cut it into the dry ingredients. Combine with your hands until it is crumbly. Add the pears and pour in the buttermilk. Mix until ingredients are evenly dispersed. The dough should be able to hold together and also hold its own shape.

Turn dough out onto a floured surface. Knead gently and pat it into a large circle, about 1 inch thick. Brush top with extra buttermilk and sprinkle with sugar. Cut into 8 triangle wedges.

Bake for 15 – 25 minutes, depending on how large your scones are. They should be lightly browned and risen. Enjoy!
