Southern Buttermilk Biscuits

Ingredients

2 cups flour, all-purpose (unbleached)
1⁄4 teaspoon baking soda
1 tablespoon baking powder (use one without aluminum)
1 teaspoon salt, kosher
6 tablespoons butter, unsalted (very cold (plus more for brushing))
1 cup buttermilk

Instructions

Preheat your oven to 400°F. Combine the flour, baking soda, baking powder and salt in a bowl, or in the food processor. Cut the butter into chunks and add into the flour. Mix together until the mixture resembles coarse meal. If using a food processor, just pulse a few times until this consistency is achieved. Add the buttermilk and mix JUST until combined. If it appears on the dry side, add a bit more buttermilk. The dough should be very wet. Scrape the dough out onto a floured board. Gently pat the dough out until it's about 1/2" thick and in a rectangular shape (do not roll with a rolling pin). Then, fold the dough over itself about 5 times and then gently press the dough down to a ¾ -1-inch thickness. Use a round cutter to cut into rounds. Place the biscuits on a cookie sheet. Bake for about 12 minutes - the biscuits will be a beautiful light golden brown on top and bottom. Do not over bake. Remove from oven and brush with melted butter.
