Sambousas

Fardowsa Yusuf

These are the delicious samosa-like meat and veggie pockets that are popular in Somali cuisine. This recipe was taught in a City Market cooking class in the Mosaic of Flavor series, with Fardowsa Yusuf from Somalia.

Ingredients

1 package spring roll wrappers
1 onion
1⁄2 bell pepper, green
2 potato
5 cloves garlic
3 carrot
1 1⁄2 pounds beef (ground)
3 tablespoons canola oil
1⁄2 teaspoon salt
1 tablespoon chili sauce
1⁄4 cup cilantro

Instructions

Very finely chop onion, pepper, and potato and grate garlic and carrots.

Heat oil in a large pot over medium heat and brown beef. Once it is brown, add remaining ingredients and cover, stirring frequently. Cook until potato is tender, about 5-10 minutes.

Pour oil into a large saucepan until it is about 2 inches high in pan and heat over medium-high heat.  Once it is hot, add enough sambousas to fill the pan and fry until golden brown on each side.
