Description
Use this delicious and easy salsa with Summer Squash Gratin.
Ingredients
| 1⁄2 | Teaspoon | oregano, dried |
| 1⁄4 | Cup | mint, fresh (coarsely chopped) |
| 1 | Cup | parsley, fresh (coarsely chopped) |
| 3⁄4 | Cup | olive oil |
| 1 | Clove | garlic (small) |
| 2 | Tablespoon | lemon juice (from 1/2 lemon) |
| 1⁄2 | Teaspoon | salt (or to taste) |
| 1 | Dash | pepper (freshly ground) |
Instructions
Using a food processor, blender, or mortar & pestle, blend the salsa verde ingredients together. Check for seasoning (salt and pepper).
