Penne with Tomato, Cream, and Five Cheeses

Ingredients

2 cups heavy cream
1 cup tomato, diced
1⁄2 cup cheese, pecorino Romano (grated)
1⁄2 cup cheese, Fontina (coarsely shredded)
1⁄4 cup cheese, Gorgonzola (crumbled)
2 tablespoons cheese, ricotta
1⁄4 pound cheese, mozzarella (thinly sliced)
3⁄4 tablespoon salt, kosher (plus more for water)
6 basil, fresh (leaves, coarsely chopped)
1 pound pasta, penne
4 tablespoons butter (unsalted)

Instructions

Heat oven to 500 degrees F. Bring a large pot of salted water to a boil. Add pasta and parboil for 4 minutes. Strain and set aside.

In a mixing bowl, combine all ingredients except the pasta and butter. Stir well to combine. Add to pasta and toss. Pour pasta mixture into a shallow baking dish. Top with thin slices of butter and bake until bubbly and brown on top, about 7-10 minutes.
