Use this Peanut Sauce with our Chicken Satay recipe.
Mix coconut milk, curry powder, peanut butter, chicken stock, and brown sugar in a saucepan and bring to a simmer. Simmer for about 5 minutes, stirring constantly, until smooth and thickened. Remove from heat and stir in lime or lemon juice and soy sauce. Season to taste with salt.
Use with Chicken Satay recipe.
