Description
Use this Peanut Sauce with our Chicken Satay recipe.
Ingredients
| 1 | Cup | coconut milk |
| 1 | Tablespoon | curry powder |
| 1⁄2 | Cup | peanut butter (creamy) |
| 3⁄4 | Cup | chicken stock |
| 1⁄4 | Cup | brown sugar |
| 2 | Tablespoon | lime juice (can use lemon juice (about 1/2 lime or lemon)) |
| 1 | Teaspoon | soy sauce |
| Dash | salt (to taste) |
Instructions
Mix coconut milk, curry powder, peanut butter, chicken stock, and brown sugar in a saucepan and bring to a simmer. Simmer for about 5 minutes, stirring constantly, until smooth and thickened. Remove from heat and stir in lime or lemon juice and soy sauce. Season to taste with salt.
Use with Chicken Satay recipe.
