Description

We make this smoothie with our bike-powered smoothie maker, but you can make it just as easily at home in the blender.

Ingredients

1⁄2Cupstrawberries (try ones from Adam's Berry Farm)
1⁄4Cuprhubarb (try from Craig Reeves Farm)
1 1⁄2Cupyogurt, low-fat (try Butterworks Farm)
1 1⁄2Cupmilk (try Monument Farms)

Instructions

Peel and chop rhubarb. Put rhubarb and 1 cup water in a saucepan and bring to a boil. Simmer for 25 minutes then remove from heat, strain liquid, and cool. Measure and mix yogurt, milk, and strawberries in a blender. Once rhubarb is cool, add to smoothie mixture and blend. Enjoy!
