Local Strawberry Rhubarb Smoothie
Description
We make this smoothie with our bike-powered smoothie maker, but you can make it just as easily at home in the blender.
Ingredients
| 1⁄2 | Cup | strawberries (try ones from Adam's Berry Farm) |
| 1⁄4 | Cup | rhubarb (try from Craig Reeves Farm) |
| 1 1⁄2 | Cup | yogurt, low-fat (try Butterworks Farm) |
| 1 1⁄2 | Cup | milk (try Monument Farms) |
Instructions
Peel and chop rhubarb. Put rhubarb and 1 cup water in a saucepan and bring to a boil. Simmer for 25 minutes then remove from heat, strain liquid, and cool. Measure and mix yogurt, milk, and strawberries in a blender. Once rhubarb is cool, add to smoothie mixture and blend. Enjoy!
