Description
In Ireland, this is the true soda bread - dark, not very sweet, and an everyday staple served with a tangy cheese, smoked salmon, or some eggs.
Ingredients
| 3 | Cup | whole wheat pastry flour |
| 1 | Cup | toasted wheat germ |
| 1 | Teaspoon | baking soda |
| 1 | Teaspoon | salt |
| 2 | Tablespoon | molasses |
| 1 | Cup | all-purpose flour |
| 2 | Cup | buttermilk (or plain yogurt) |
Instructions
Preheat oven to 425 degrees.
Lightly grease a baking sheet or line with parchment paper. In a large bowl, stir together whole wheat flour, white flour, toasted wheat germ, baking soda, and salt. Gently mix in the buttermilk (or yogurt) and molasses until a soft dough in formed. Knead very lightly.
Divide dough into 2 pieces: form into rounded flat loaves. Mark each loaf with an "x" and place on prepared baking sheets. Bake in preheated oven until golden brown, about 40-45 minutes. Allow to cool before slicing.
