Crockpot Apple Butter

Ingredients

5 pounds apples (2-3 varieties)
1 cup sugar
1 cup brown sugar
3 teaspoons cinnamon
1⁄2 teaspoon cloves (whole or 1 tsp ground)
  pinch salt
1⁄2 lemon juice
1⁄2 teaspoon vanilla

Instructions

Core and peel your desired apples. Place them in a crockpot and cover with sugar, brown sugar, cinnamon, cloves, salt, lemon juice and vanilla. Give the mixture a quick stir to distribute the ingredients evenly over the apples. Cover the crockpot and set to low. Let cook undisturbed for 8 hours. When the apples are good and soft after 8 hours, let cool slightly and blend until smooth with an immersion blender. 

Sterilize 3 pint jars in a hot water bath. Fill the jars with the smooth apple butter, cover, and store in the fridge.
