This recipe was one of the top four entries in our 2011 We ♥ Local Food dessert recipe competition!
Ingredients
| 1 | Cup | sour cream (or crème fraîche--Use local!) |
| 3⁄4 | Cup | maple syrup (divided, local!) |
| 1 | egg (local!) | |
| 1⁄2 | Teaspoon | vanilla extract |
| 1⁄2 | Teaspoon | cinnamon |
| 1 | Pinch | mace, ground (optional) |
| 1 1⁄2 | Cup | blueberries (local! raspberries work too) |
| 1⁄4 | Cup | butter (local!) |
| 2 | Cup | flour, whole wheat pastry (local!) |
Instructions
Preheat oven to 350°.
Prepare Crust: Cut butter and flour together with pastry blender or your hands. Pour 1/4 cup of the maple syrup over crumbs and toss to moisten. Put aside 1/3 of this mixture to use for topping. Press into 8x8” baking pan.
Prepare Filling: Combine all ingredients except berries and beat until very smooth and creamy. Stir in berries gently so they bleed as little as possible. Pour filling over crust and sprinkle reserved crumbs on top.
Bake until center is set and the crumbs are lightly browned (approximately 45-50 minutes).
Cool before cutting.
