This monthly series is a collaboration with the Vermont Refugee Resettlement Program. In February we will make two dishes from Nepali, a chicken curry and raita, a Nepalese cucumber, yogurt and carrot salad. Shreepali Rajbanshi is co-owner and chef of Nepali Kitchen, a family-style Nepalese restaurant in Essex Junction. Shreepali moved to Vermont in May, 2016 to join her husband Jeetan Khadka and together they run Nepali Kitchen.
