A Mosaic of Flavor: Congolese Fish and Foufou

Tuesday, January 21, 2014 - 6:00pm to 7:30pm
Integrated Arts Academy

Note: New location. This class will be held at the Integrated Arts Academy instead of the Sustainability Academy. Please enter the building through the west side door off the parking lot.

Bruno Kombo was the chef and owner of Bruno's Place in Brazzaville, Congo. Now he works at Roland's Place/The Old Lantern in Charlotte and the Skinny Pancake. He will show us how to make African fish in a tomato, scallion and garlic broth. In addition, he will help us make a big pot of foufou (cassava), Congolese-style, to dip in the broth. Bembe music will transport us to Equatorial Africa and might even inspire some dancing - which is what Congolese always do when they get together to feast. A Mosaic of Flavor is a collaboration of City Market and the Vermont Refugee Resettlement Program.
