Bruno Kombo was the chef and owner of Bruno's Place in Brazzaville, Congo. Now he works at Roland's Place/The Old Lantern in Charlotte and the Skinny Pancake. He will show us how to make African fish in a tomato, scallion and garlic broth. In addition, he will help us make a big pot of foufou (cassava), Congolese-style, to dip in the broth. Bembe music will transport us to Equatorial Africa and might even inspire some dancing - which is what Congolese always do when they get together to feast. A Mosaic of Flavor is a collaboration of City Market and the Vermont Refugee Resettlement Program.
