Feel free to be creative with this salad and use the veggies and spices you have on hand such as apples, broccoli, corn, celery, green beans, peppers, etc.
Soak wheat berries overnight or at least 8 hours (if you don't have time for this step, cook the wheat berries for longer).
Bring a medium-large pot of salted water to boil and add the soaked wheat berries. Cook for 1 hour, slightly covered, stirring occasionally, until the wheat berries are cooked (they will be slightyl chewy even when tender). Drain and place in a medium salad bowl to cool.
Add chopped fruit/veggies, nuts/seeds, dried fruit and herbs and toss. Add olive oil and apple cider vinegar and toss again. Season with salt and pepper to taste.
