A no-bake recipe that only uses the stove top and is then chilled in the 'fridge. Sweet, delicious and fun to make with kids! It's been suggested that this might be tasty with about 1 tsp of cardamom.
Heat dates, maple syrup, and eggs in a medium-size heavy-bottomed pot. Stirring frequently, heat until the mixture froths and bubbles and the color changes to a light gold. Immediately turn off the heat. Stir in vanilla, chopped nuts, and rice crispies. Allow to cool. Wet your hands and then shape into small ¾-1” balls. Roll in coconut. (You may have to rinse your hands partway through.) Chill in the refrigerator until ready to serve.
