This deceptively simple dish is one of the most delicious things to do with zucchini. It can be served as a side-dish or can be used on a fresh salad.
Sautee the onion and zucchini in the olive oil in a skillet until the zucchini softens - 15-20 minutes (don’t skimp on this step – the zucchini becomes buttery soft and sweet through this almost caramelizing process). Toss in the pesto and add salt to taste. Serve warm as a side dish and use any left-overs to top a fresh salad.
