This is a delicious way to prepare those healthy "dark leafy greens". Serve this as a vegetable side dish or throw in some beans and serve over pasta or rice for a full meal.
Saute the onions in a little olive oil. After a few minutes, add the tomatoes, cumin, garlic, red pepper flakes and salt. Saute until onions are tender.
Remove the central rib from the collard greens or kale. Chop into 1 inch strips. Add the greens to the onions and tomatoes and saute until the greens are tender.
