Roasted Garlic White Bean Hummus

Roasting garlic is super easy and adds a depth of flavor to dips, dressings and sauces! Enjoy this unique spin on the classic white bean dip! Creamy, tangy and delicious—enjoy with your favorite pita chips or crunchy vegetables.

Ingredients

1 garlic (whole)
1 tablespoon olive oil (plus 1 teaspoon)
15 ounces beans, white (drained & rinsed)
3 tablespoons tahini
1 lemon juice
1⁄2 teaspoon cumin
1⁄8 teaspoon paprika, smoked
1 teaspoon salt
2 tablespoons parsley, fresh (roughly chopped & divided)
1⁄2 teaspoon black pepper, ground
1 teaspoon olive oil

Instructions

Preheat the oven to 400 °F. Take the whole head of garlic, and slice off the top, so a little bit of each clove is exposed. Place in aluminum foil and drizzle 1 tsp of olive oil on top of the cloves. Wrap the head of garlic in the foil and place in the oven. Roast for 30-40 minutes until the cloves are slightly brown, noticeable juicy and fragrant. Remove the head from the foil and let cool for 10-15 minutes. While the garlic is cooling, in a food processor add white beans, tahini, lemon juice, cumin, smoked paprika, salt, pepper, 1 Tbsp olive oil and 1 Tbsp of fresh parsley (reserve the remaining 1 Tbsp for topping). Squeeze roasted garlic (removing skin) into food processor. Blend ingredients until smooth. Taste and add more salt, pepper or parsley. Spoon into a serving bowl or platter and top with a drizzle of olive oil, remaining fresh parsley and black pepper. Enjoy with pita chips or fresh vegetables!
