Brussels sprouts, apples, and bacon together make quite the trio. Try this easy recipe as a side for family dinner.

4 slices
bacon (thick cut, cut into 1/4 - inch pieces)
1 1/2 pound
Brussels sprouts (trimmed and halved)
2 tablespoons
olive oil
1/2 teaspoon
salt, kosher (plus more to taste)
apple, golden delicious (or Roxbury Russet, cored and cut into 1 1/2 - inch chunks)
shallot (peeled and sliced into 1/4 - inch wedges)
black pepper (freshly ground to taste)

Heat oven to 400 degrees F. Spread bacon on a large sheet pan and roast, stirring occasionally, until fat has rendered and bacon is golden, about 8 minutes. Meanwhile in a large bowl, toss Brussels sprouts, oil, ½ tsp salt, apples, shallots, and a few grinds of pepper. Add to sheet pan with bacon, toss to coat, and spread out evenly. Roast, stirring occasionally, until golden brown, 25-30 minutes. Season with salt and pepper.
