Rhubarb Citrus Soda

Adapted from a recipe by Honey Gardens Apiaries, published in Cooking with Shelburne Farms

This drink is a refreshing spring tonic, and so much better for you than other sodas!  If you're tired of using rhubarb in the same old way, give this easy-to-make soda a try.

8 Cups

Ingredients

4 cups rhubarb (about 1 pound)
6 cups water
1 cup orange juice (freshly squeezed, if possible)
1⁄2 cup lemon juice (freshly squeezed, if possible)
1 cup honey
2 quarts seltzer water

Instructions

Place rhubarb in a large pot and cover with 6 cups of water. Bring to a boil. Reduce heat, cover and simmer for 20 minutes.

Pour citrus juices and honey into a large vessel (8 cups or larger). Pour rhubarb through strainer into the container, pressing the rhubarb to release all of its juices.  Pour in honey and whisk to dissolve. Taste and add more honey if desired, keeping in mind that this will eventually be diluted with seltzer.

Refrigerate in a sealed container. To serve, pour the rhubarb beverage into a glass and add equal parts seltzer (or less or more to taste). The base may be refrigerated for up to one month
