Potato, Kale and Blue Cheese Gratin

Description

A great comfort food dish with lots of flavor thanks in part to the blue cheese.

Ingredients

onion
3 cloves
garlic
2 tablespoons
ghee
4  
potatoes
4 cups
kale
2  
eggs
2 tablespoons
water
1/4 cup
cheese, blue
1 teaspoon
salt
1 tablespoon
chives

Instructions

Place potatoes in cold water and bring to boil. Boil until just barely done (5-10 min), then drain.

Meanwhile, heat half of the Ghee in a large skillet. Add onions and cook over medium heat for 3-4 min, then add garlic. Turn heat to low and cook 3-4 minutes more.

Remove onion and garlic mixture from skillet. In same skillet, melt remaining ghee and add potatoes and brown over medium heat.

Chop kale and cook in boiling water until tender (3-5 min). Drain.

Mix eggs, 2 Tbs water, blue cheese, salt, and chives in a bowl. Add kale and onion/garlic mix to potatoes in skillet, turn heat to low. Add egg/cheese mixture after pan has cooled  to low. Mix and cover pan. Let cook on low heat for at least 5 min. When ready to serve, remove cover and turn up heat for a couple minutes.
