Pineapple Fried Rice

A taste of the tropics may be just what you need on a cold day. This delicious and flavorful recipe makes for some awesome leftovers.

Ingredients

3 tablespoons soy sauce
1 tablespoon sesame oil
1⁄2 teaspoon ginger, ground
1⁄4 teaspoon white pepper
2 tablespoons olive oil
2 cloves garlic (minced)
1 onion (diced)
2 carrot (peeled and grated)
1⁄2 cup corn, frozen
1⁄2 cup peas, frozen
3 cups rice, brown (cooked)
2 cups pineapple (diced)
1⁄2 cup ham (diced)
2 green onion

Instructions

In a small bowl, whisk together soy sauce, sesame oil, ginger powder and white pepper. Set aside.

Heat olive oil in a wok (or large skillet) over medium high heat. Add garlic and onion to the skillet and cook, stirring often, until the onions become translucent (about 3-4 minutes). Stir in carrots, corn, and peas. Cook, stirring constantly until vegetables are tender (about 3-4 minutes more). Stir in rice, pineapple, ham, green onions and soy sauce mixture. Cook for 2 minutes, or until mixture is heated through. Serve and enjoy warm!
