Description

The salad can be served right away or can sit for an hour to help the flavors meld. Slice the fresh mint leaves and add to the salad just before serving.

Ingredients

1 cup
beets (peeled and grated)
2 cups
carrots (grated)
1/2 cup
raisins
1/2 teaspoon
paprika
1/4 teaspoon
cumin, ground
1/4 teaspoon
cinnamon
  pinch
salt
  pinch
cayenne
2 tablespoons
lemon juice
2 tablespoons
mint leaves (sliced)

Instructions

Grate the beets and carrots, then combine in a bowl with the raisins. In a separate bowl, combine the spices and lemon juice, stirring until smooth. Slowly pour the dressing over the beets and carrots, folding the mixture to evenly distribute. Taste and adjust the flavors as needed.
