Massaged Kale Salad with Grapefruit and Avocado

Who says salads aren't intended for the winter? This one hits a perfect note between exotic and healthy in those darker days, and is sure to brighten up your taste buds.

Ingredients

6 cups kale (stems removed and roughly chopped)
2 tablespoons olive oil
1 tablespoon lemon juice
  salt
2 grapefruit
2 avocado
  black pepper

Instructions

In a bowl, combine the kale, olive oil, and lemon juice. With your hands, gently massage the kale to combine it with the dressing. After a minute or two, the kale should be tender. Add salt and pepper, adjusting the acidity as needed.

Remove the peel and outer membrane of the grapefruits with a sharp knife. Carefully slice the sections apart, then cut each section in half. Cut each avocado in half, remove the pits, then cut into slices. Add the grapefruit and avocado to the kale, quickly toss, and serve.

Notes

Lacinato kale works well for massaged kale salads, as does baby kale.
