Massaged Kale Salad

Description
This is a new favorite! Quick and easy, it’s also ridiculously fun to make. Use local kale, apple cider vinegar, garlic and apples to make this a Localvore tasty treat.
Ingredients
| 1 | Bunch | kale |
| 1⁄2 | Teaspoon | sea salt |
| 2 | Tablespoon | apple cider vinegar |
| 1⁄4 | Cup | olive oil (or try local sunflower oil) |
| 1 | Clove | garlic (peeled) |
| 1 | apple (1 small or 1/2 large, diced) | |
| black pepper (freshly ground, to taste) |
Instructions
Remove stems from kale, cut or tear into large pieces, and place in a large mixing bowl. Add salt and olive oil and gently massage into kale for a few minutes with your fingers. Add vinegar and garlic and massage a few more minutes, until kale is wilted. Finally, add apple and ground black pepper. Adjust seasoning to taste, and serve, or add any of the optional additions (disclaimer: I almost never measure the ingredients when I make this – it’s a very flexible recipe that is easy to adjust on the fly).
Notes
If you don’t mind using some non-local ingredients, try any of these additions or make up your own:
1/4 cup sunflower seeds, raw or toasted
1/4 cup dried currants, cherries, or raisins
1 avocado, cut into chunks
Substitute lemon juice for olive oil and add lots of fresh parsley
