Lemon Bars

These bars are easy to bake up on any normal day but are special enough for a dinner party or bake sale!

Ingredients

1⁄4 cup butter
2 1⁄4 cups flour, all-purpose
3⁄4 cup sugar, powdered (plus extra for dusting)
4 egg
1 1⁄3 cups sugar
1 teaspoon lemon zest
3⁄4 cup lemon juice
1 pinch salt

Instructions

Preheat the oven to 350F. Grease a 9x13 inch baking dish. In a large mixing bowl, whisk together 2 cups of flour and powdered (confectioners') sugar. Cut in the butter with a pastry cutter or your fingers until the mixture is crumbly (this can also be done in a food processor). Press the dough into the pan evenly. Bake for 15-17 minutes.

While the crust is baking, whisk together the eggs, sugar, lemon zest, lemon juice, salt, and remaining 1/4 cup flour in a large bowl. Pour the filling into the hot crust. Place the dish back in the oven and bake for another 15-20 minutes until the filling is set.

Let the bars cool completely before cutting or topping with powdered sugar.
