Enjoy this smoky, sweet summer salad. Perfect as a side salad or addition to any summer grill party. Add in fresh tomatoes for a pop of color and flavor.
Leaving the husks on, place corn directly onto hot grill, turning occasionally, until the corn feels tender and the husk is black. Remove from grill and set aside to cool. While corn is cooling, dice green pepper and onion. Shuck corn, slice kernels off the cob, and place into bowl. Add onion, green pepper, lime juice, salt and pepper and toss to combine. Enjoy!
