Grated Beet and Mustard Salad

Grated beet salads are an easy way to use up beets without needing to cook them. Try this zingy salad as a side dish or atop your next burger.

Grated Beet and Mustard Salad

Ingredients

2 cups beet (grated)
4 tablespoons green onion (minced)
1 tablespoon Mustard, Dijon
2 tablespoons olive oil
4 tablespoons apple cider vinegar
2 teaspoons tarragon, fresh (minced)
  salt (to taste)
  black pepper (to taste )

Instructions

Grate the beets, mince the green onion, and combine in a bowl. In a separate bowl, combine the mustard, oil, vinegar, salt and pepper. Drizzle over the beet mixture, tossing in the minced tarragon as you go. Taste and adjust the flavors as needed.

The salad can be served right away or can sit for an hour to help the flavors meld.
