Fresh Fruit Crisp with Lemon

This fruit crisp is the best I've ever eaten. The grated parmesan in the oat topping is a savory addition and, along with the zing of lemon, this crisp is really unique and delectable. Note that the plums and peaches can be substituted with any other fresh or frozen fruit, depending on whats in season and on sale.

Ingredients

3 cups plum
3 cups peach
2 cups raspberries
1 1⁄2 cups brown sugar
1 1⁄2 cups oats, rolled
3⁄4 cup flour, all-purpose
3⁄4 cup cheese, parmesan
1 teaspoon salt
1 teaspoon lemon zest
1⁄2 cup butter, unsalted

Instructions

Preheat the oven to 375º and lightly butter a 9x12 inch baking dish. Slice the fruit and layer it in the bottom of the baking dish. In a medium bowl, mix together the sugar, oats, flour, cheese, salt, and lemon zest. With a mixer, food processor, or pastry cutter work in the butter until the mixture is loose and crumbly. Work quickly to keep the butter cold. Sprinkle topping over fruit and bake in the oven until top is lightly browned and fruit is bubbling, about 35 minutes. Serve warm w/ ice cream!
