Crispy Quinoa Kale Salad with Local Apples

Apple season is upon us! Try out this yummy kale salad with local apples. McIntosh, Honeycrisp, and Empire varieties all work great in this salad. The crispy quinoa adds a fun, crunchy bite.

Ingredients

1 bunch kale, lacinato (chopped)
1⁄2 cup quinoa (cooked)
1 apple (sliced)
1⁄4 cup walnuts (roughly chopped)
1⁄4 cup almond milk (unsweetened)
1⁄4 cup tahini
1 tablespoon lemon juice
1 tablespoon Mustard, Dijon
1 tablespoon apple cider vinegar
1⁄2 teaspoon salt
1⁄4 teaspoon black pepper

Instructions

Preheat oven to 500° Fahrenheit. Spread cooked quinoa in a thin layer on a sheet pan. Place in oven and cook 5-7 minutes or until quinoa is crispy. Remove from oven and set aside to cool. To make the dressing, add all ingredients in a large mason jar and shake until well combined. Set aside. In a large salad bowl, add kale, apple slices, walnuts and crispy quinoa. Drizzle the creamy tahini dressing on top and toss to combine. Enjoy!
