Caramelized Onion and Blue Cheese Dip

This dip is inspired by a classic - Lipton Onion Soup mix combined with sour cream. By making this dip completely from scratch - and with local products like Vermont Creamery crème fraîche and Bayley Hazen Blue - you can control the saltiness of the final product and tinker with it according to your tastes, adding more lemon juice, cheese or Worcestershire as desired. Caramelized Onion Blue Cheese Dip

Ingredients

2 tablespoons butter, unsalted
1 onion, sweet (large)
1 teaspoon salt
1⁄4 teaspoon black pepper
8 ounces crème fraîche
1⁄4 cup cheese, blue (crumbled)
1⁄4 cup mayonnaise
1 tablespoon lemon juice
1 teaspoon Worcestershire sauce

Instructions

In a medium skillet, melt the butter; cook the onions, seasoning them with the salt and pepper, stirring often, until brown and caramelized, about 20 minutes. Remove from the heat to cool.

In a medium bowl, combine the cooled onions with the crème fraîche, blue cheese, mayonnaise, lemon juice and Worcestershire sauce. Adjust seasoning and serve with fresh, crunchy vegetables or chips.
