Caesar Salad

A gluten-free version of a classic salad.

Ingredients

5 tablespoons olive oil, extra virgin
5 cloves garlic
3 tablespoons mayonnaise
  lemon juice
2 tablespoons Worcestershire sauce
1 teaspoon apple cider vinegar
2 lettuce, romaine (full heads)
1 ounce cheese, parmesan (grated)
4 slices bread
  black pepper

Instructions

Whisk 3 Tbsp oil, 1 clove garlic (smashed), mayonnaise, lemon juice, Worcestershire sauce, apple cider vinegar, and black pepper together to make the dressing.  Rub bread slices with 4 small garlic cloves and bake at 375 degrees until dry and toasted. Break or cut into croutons.  Meanwhile, wash lettuce and cut lengthwise to make 4 halves. Place lettuce and croutons in a bowl and toss with dressing and Parmesan.  If desired, top with slices of grilled chicken or salmon.
