Description
A Burmese stew eaten for special gatherings with family and friends. This recipe was taught in one of City Markets Mosaic of Flavors classes.
Ingredients
1 pound
lentils, red 3
carrot 3
eggplant, Asian (medium) 4
tomato (small) 3
potato 1
squash, winter 1
plantain (firm) 1
onion 2 cloves
garlic 1 slice
ginger, fresh 1/2 cup
soy sauce 1 teaspoon
garam masala 1 slice
turmeric, fresh 1 teaspoon
paprikaInstructions
Cover lentils with water in a large pot and boil for about 15 minutes. As lentils cook, coarsely chop remaining ingredients. Add everything to the pot of lentils (adding water as necessary) and bring to a boil. Cover and simmer for about thirty minutes until everything is tender. The meal can be enjoyed on its own or eaten with rice.
