Sheffield Seitan has been making high-quality wheat gluten meat subsititutes since 1979.  Sheffield Seitan describes their process this way: "The wheat is custom stone milled just for us using only hard red spring wheat kernels. The flour is mixed with pure well water and kneaded thoroughly before rinsing to remove the starch from the dough. The raw seitan is stored overnight to let it settle, cooked in a broth of soy sauce and well water, and seasoned with garlic and cayenne."  The result is delicious seitan!
