Shacksbury Cider was co-founded by David Dolgino and Colin Davis. The team at Shacksbury is working to create complex traditional ciders using both heirloom apple varieties, as well as ciders made from apples grown in other countries. Their Lost Apple Project aims to identify and cultivate apples that have been all but forgotten in the Vermont landscape and in cidermaking. In 2013, the team sampled hundreds of apple trees around the state, made cider from 54 different varieties, and chose 5 varieties to propagate. They grafted the 5 varieties to 250 trees at Sunrise Orchards, one of their partners. You can find their rotating selection of ciders in our Beer and Wine Department.
