The Cellars at Jasper Hill in Greensboro is an amazing underground network of 7 vaults where they age artisan cheeses, vaults nested directly below the pastures where Jasper Hill Farm grazes their 40 cows. The Cellars, founded in 2007, provides the perfect environment to age cheeses for artisan cheese producers before they are sold to cheese counters like ours. The vaults age cheeses for Jasper Hill Farm, Landaff Creamery, von Trapp Farmstead, Scholten Family Farm, and Cabot Creamery’s Clothbound Cheddar. The staff of the Cellars provides expertise and logistics support to help small scale cheesemakers reach a national marketplace. Jasper Hill Farm also has a "Green Machine" that helps manage the manure, whey, and water-wash from their operations. Compost and treated water from the machine is spread on Jasper Hill's pastures and the heat energy recovered is used to replace conventional fuel-oil used in the creamery boiler.
