Global meets local as Ammy Martinez brings us Fricase de Pollo Cubano, or Cuban Chicken Fricassee, a Cuban chicken stew with fresh, locally-sourced ingredients. Bilingual in Spanish and English, Ammy is an expert on Cuban and Brazilian cuisine and is familiar with the Vermont agricultural landscape. This dish has French origins because of a Haitian migration to Cuba during the 1800s. In this recipe, you'll find chicken that has marinated in spices and sour orange juice and then simmered in a rich tomato-based sauce with potatoes, olives and raisins.
