Description
This "pickled" slaw is great for picnics and lactose-free diets since it doesn't contain mayo or sour cream.
Ingredients
| 1⁄2 | Cup | sugar |
| 3⁄4 | Cup | white vinegar |
| 2 | Teaspoon | mustard seeds |
| 2 | Teaspoon | celery seeds |
| 1 | Teaspoon | salt |
| 1 | red onion (small - peeled and minced) | |
| 1 | green cabbage (small - shredded) | |
| 1 | bell pepper, green (cored, seeded and minced) | |
| 1 | Tablespoon | pimentos (minced) |
Instructions
Mix together sugar, vinegar, mustard seeds, celery seeds, and salt in a large bowl. Stir until sugar has completely dissolved. Add cabbage, peppers, pimentos, and onions and toss to mix well. Cover and refrigerate overnight or for up to 2 weeks. The longer it marinates the more “pickled” it becomes.
