Description

This "pickled" slaw is great for picnics and lactose-free diets since it doesn't contain mayo or sour cream.

Ingredients

1⁄2Cupsugar
3⁄4Cupwhite vinegar
2Teaspoonmustard seeds
2Teaspooncelery seeds
1Teaspoonsalt
1 red onion (small - peeled and minced)
1 green cabbage (small - shredded)
1 bell pepper, green (cored, seeded and minced)
1Tablespoonpimentos (minced)

Instructions

Mix together sugar, vinegar, mustard seeds, celery seeds, and salt in a large bowl.  Stir until sugar has completely dissolved.  Add cabbage, peppers, pimentos, and onions and toss to mix well.  Cover and refrigerate overnight or for up to 2 weeks.  The longer it marinates the more “pickled” it becomes.
