Kale and Quinoa Salad with Pomegranate, Apple & Feta

Ingredients

1 cup quinoa (dry)
1⁄2 cup water
6 cups kale (finely shredded)
1 apple (large, sliced into matchsticks)
1⁄2 cup pomegranate (seeds)
1⁄4 cup walnuts (roughly chopped)
1⁄4 cup cheese, feta (crumbled)
1 tablespoon garlic (minced)
1 teaspoon Mustard, Dijon
3⁄4 cup olive oil
3⁄4 teaspoon salt, coarse
1⁄4 teaspoon black pepper
3 teaspoons apple cider vinegar
2 teaspoons lemon juice (fresh)
1⁄4 teaspoon Worcestershire sauce (optional)
1 teaspoon agave nectar (or maple syrup, or honey (optional))

Instructions

Bring the water and quinoa to a bowl, reduce heat to simmer, and cover. Simmer for about 15 minutes, until all the water has been absorbed. Fluff the quinoa with a fork. Remove from heat, and let sit uncovered for about 5 minutes to cool. Once cooled, toss together the quinoa, kale, apple, pomegranate seeds, and walnuts. Let sit while you make the dressing.

Mash together the garlic, mustard, sweetener (if using) salt, pepper, and Worcestershire sauce (if using). Pour over the vinegar, lemon juice and olive oil. Cover and shake to combine, or whisk together in a bowl. 

Dress the salad and adjust seasoning as desired. Sprinkle with crumbled feta and serve.
