Put a spicy twist on the classic mac and cheese! 

Roasted Garlic and Jalapeno Mac 'N Cheese

Ingredients

2 cups heavy cream
2 cups milk
1 cup butter (unsalted)
1 cup flour
2 shallot (minced)
2 bay leaf
  pinch nutmeg, ground
1 tablespoon salt, kosher (plus 1 tsp, divided)
1 teaspoon white pepper
8 ounces cheese, sharp cheddar (shredded)
1⁄2 cup cheese, romano (grated)
1⁄2 cup cheese, parmesan (grated, plus 1/4 cup for topping)
1 cup garlic (roasted, peeled)
1⁄2 cup pepper, jalapeño (fresh, sliced)
1 pound pasta, cavatappi
1⁄2 cup breadcrumbs
1 tablespoon parsley, fresh
1 teaspoon black pepper
1⁄2 teaspoon red pepper flakes (crushed)

Instructions

TOPPING

1) Combine all ingredients, and set aside.

BASE

1) Cook pasta until al dente. Rinse under cold water to cool and set aside.

2) In a large sauce pan melt butter over medium heat. Add minced shallots and sweat 3 minutes, add flour and cook 5 minutes, stirring often.

3) Add cream, milk, bay leaves and nutmeg. Stir occasionally to prevent scorching simmer for 5 minutes, until thick.

4) In large bowl combine cooked pasta, warm cream mixture, roasted garlic, jalapeno, cheddar, parmesan, and Romano. Fold gently to combine.

5) Sprinkle with topping and bake at 375° for 30-40 minutes.

Notes

The ingredients for the base stop after the Cavatappi Pasta and the ingredients for the topping starts at breadcrumbs! 

Feel free to experiment and add in additional veggies, like carrots, parsnips, kale, etc.
